I recently found myself in a kitchen dilemma. I was staring at a blank culinary canvas — two leftover crispy quinoa patties. But I was craving Mexican food. So I painted that canvas with the colors and flavors of Mexico.
These quinoa patties are seasoned with garlic, cumin, Mexican oregano, lime zest and cilantro, then pan-seared to golden, crispy perfection.
Plated in a stack of refried black beans, healthy greens and avocado mash, topped with a cooling yogurt lime sauce and tasty pico de gallo. All the taste, easier on the waist!
