Palisade Peach Crostini

Sweet, juicy Palisade peaches and creamy goat cheese topped with basil and salted hot honey. Summer yum!

Palisade Peach Crostini

This is such a delicious way to celebrate peach season.  And it couldn't be easier.

  1. In a small bowl, mix some honey, crushed red pepper and salt to taste.  You'll need enough to drizzle over the assembled Crostini.  Start with a little, you can add more honey, red pepper and/or salt if needed.  Set aside.

  2. Toast the bread slices.

  3. While the bread is toasting, slice the peach and chop some fresh basil.

    Tip:  I find it easiest to cut the peach in quarters, running the knife around the pit.  Then gently pull the quarters away from the pit.  Slice each quarter lengthwise in half, and then each of those pieces lengthwise in half again.

  4. To assemble, spread some goat cheese over each toasted slice of bread and arrange the sliced peaches on top.

    Tip:  The goat cheese will spread more easily if it has warmed up a bit, so take it out of the fridge ahead of time.

  5. Drizzle some of the salted hot honey over top, and then sprinkle some chopped fresh basil over.
