
Fresh summer peaches spiced with cinnamon and cardamom, topped with a crunchy, buttery oat crisp
Peach Crisp for Two
This is a classic dessert featuring fresh seasonal peaches. Since it's just the two of us and we don't eat dessert very often, I prefer to make single-serve portions. I also prefer desserts that aren't overly sweet. I think this crisp strikes a nice balance.

In a mixing bowl, add the oats, flour, sugar, butter, salt, baking soda, vanilla and nuts (if using). Mix together well until small clumps/clusters begin to form. I find it easier to mix/mash the ingredients with my fingers.
Cover the bowl and place in the refrigerator until ready to use. I usually mix the topping and let it sit in the refrigerator a couple hours before baking.
Prepare the filling and bake

When you are ready to bake, preheat the oven to 350F.
Mix the peaches, cinnamon, cardamom and salt in a bowl.

Lightly grease two ramekins with butter.

Spoon half of the peach filling into each ramekin, then top each with half of the oat topping.

Bake in a 350F oven for about 30 minutes. All ovens cook a little differently, though, so watch closely and adjust cook time as needed.

Serve warm. This is especially nice with a small scoop of gelato!
